Aulis London, Simon Rogan’s chef table and development kitchen restaurant in the heart of Soho, offers a dynamic and interactive dining experience in which a series of dishes are cooked and explained in front of the guests. Originally opened with eight seats, its popularity over the years has meant that the restaurant needed to grow.

Fileturn was commissioned to extensively remodel the restaurant, doubling its size by going into the unit next door. This additional space houses a lounge area where diners can enjoy drinks before or after the dinner. The expansion has also meant that the chef’s table now offers 4 extra covers to bring its total capacity to 12.  

We worked closely with the designers, Blacksheep, to bring to life their design concept which features rich, green furnishings, earthy tones and recycled materials alongside warm hues and multi-textural accents.

Works included stripping out the existing unit prior to the fit-out, creating bespoke joinery items which house new appliances for the Chefs, new mechanical and electrical installations including a new extract which rises up the entire rear of the building, new kitchen prep area, a new accessible WC, flooring and decoration.

The showpiece is the chef’s table itself which features an impressive  countertop made from large pieces of natural stone and is accompanied by a ‘softly illuminated’ wine store display.
